I should have been a teacher. I love providing information in a fun and interesting manner to anyone that needs encouragement. Being gluten-free is very traumatic for newly diagnosed gluten-intolerant people, so I find that with humor and a positive attitude, people can see that being gluten-free is as easy as 1-2-3 if they do it the right way.

I teach with a three step approach.

Step 1 - Elimination

Before anyone goes out and starts buying a bunch of gluten-free, pre-packaged products I teach them the basics. Knowing what gluten is, what grains contain it and how to read labels is the first step to gluten-free living.

Step 2 - Transition

Having a great attitude, finding new foods to love, and learning how to be prepared in and out of the home creates confidence. This confidence helps sufferers stay 100% compliant and feel better quickly and inexpensively.

Step 3 - Substitution

Gluten-free foods can be very unhealthy if you choose the wrong ones. Choosing fresh, local, and organic foods are easy to substitute into your diet but knowing what tasty pre-packaged products are available on the market can save time and money.
